To add Gender as a field, go back to the original drop-down list (the one at the top), click on it again, click on 'Demographic' in the list, and then click on the 'Add' button to the right of the list. Image Added

Select Demographic (highlighted in red) from the drop-down list, then click on the Add button (also highlighted in red).
